When: Mid-November to mid-March.
Shape: Small wart-like bumps in a polygon form.
Outer Skin: Black at maturity.
Flesh: Black/purple at maturity with fine veins.
Perfume: Dry mushroom, humus and wet forests, chocolate.
Feeling: Crunchy and soft.
Taste: Spicy with a taste of black radish, hint of hazelnut, woody.
Tuber Magnatum - White Truffle
When: October to January.
Outer Skin: Smooth, pale cream/yellowish.
Flesh: Beige or light brown tainted with a touch of pink with white veins.
Perfume: Combination of earth, garlic, tree roots and cheese.
Taste: Combination of garlic, shalots and cheese.
Tuber Aestivum - Summer Truffle
When: May to September.
Outer Skin: Dark brown/black.
Flesh: Beige/grey with numerous white veins.
Perfume: Mushroom.
Taste: Mushroom – Hazelnut.
Tuber Uncinatum - Burgundy Truffle
When: September to January.
Outer Skin: Black.
Flesh: Dark brown at maturity with numerous veins.
Perfume: Mushroom, hazelnut.
Taste: Hazelnut taste when mature.
Tuber Brumale - Truffle Musquée
When: November to March.
Outer Skin: Dark brown/black, fragile, peels off easily.
Flesh: Grayish black with large white veins.
Perfume: Strong and "musquée".
Taste: Slightly bitter and humus.
